Company History

Catherine Tuff trained in Food and Consumer Management (Home Economics) at Birmingham University College of Food & Tourism and then worked in hotels and as the catering manager at a residential school for deaf children. She moved into food journalism in London as cookery editor on national magazines for IPC, before working freelance, authoring cookery books. Relocated to the Scottish Borders in 1990 to set up the independent food consultancy, TFC Food Services. As a former Chief Inspector for Taste of Scotland, Catherine worked with VisitScotland to develop their new food grading scheme. Catherine was the national trainer's tutor for the Natural Cooking of Scotland scheme aiming to encourage the use of fresh local produce by the catering trade. Quality Control Inspector for the SCC Scottish Healthy Choices Awards Scheme. She has been delivering live culinary workshops round the country for Food Tourism Scotland, including St Andrews in February. Catherine is a member of REHIS and is an approved trainer to deliver the Elementary Food Hygiene Certificate course. Catherine was a director of Scottish Enterprise Borders, Scottish Borders Tourism Business Forum and was vice chair of Scottish Borders Tourism Partnership. She sits on VisitScotland Chairman's Committee Industry Group and is a member of the Tourism Linkages team at Tourism Innovation Group. Part of the Scottish Executive Ministerial committee which drafted the Tourism Strategy for Scotland 06.

Breakfast Bazaars served up in key tourism destinations

Catherine Tuff has been demonstrating exciting Scottish breakfast dishes to tourism operators. The events are part of the Food Tourism Scotland initiative, supported by Scottish Enterprise, which is organising free, innovative and practical workshops on improving the quality of breakfasts in guest accommodation across Scotland. Events so far have taken place in Loch Lomond, Edinburgh, St Andrews, Aboyne, Aberfoyle and Pitlochry with more are scheduled for later in 2009.

The workshops feature Catherine and two colleagues, demonstrating simultaneously on different themes in a new, informal 'bazaar' format enabling all delegates to see three different demonstrations during the course of the half day workshop. Feedback has been overwhelmingly enthusiastic with delegates keen to taste all the dishes and check up on techniques for incorporating the dishes onto their existing menus. The three demonstration themes are Contemporary Scottish, Signature Dishes and Vegetarian Breakfasts.

The breakfast service, especially in a small establishment, can be very pressurised and we are aware that any new introduction needs to be easy to prepare and serve during this busy period. We are delighted that our tips and ideas have given many delegates new inspiration on ways to refresh their morning menus said Catherine, The inclusion of local produce is a great way to improve quality and add a valuable USP. Our event evaluations showed a significant success, with around 90 of participants indicating that they would definitely make some changes to their breakfast menu.
